Christmas Pairing with Quinta da Alorna Reserva

Confit Cod with Punched Potato and Dehydrated Olive – The ideal pair of our Quinta da Alorna Reserva Arinto & Chardonnay


  1. Close a vacuum cod seasoned with bay leaf, a clove of garlic and plenty of olive oil.
  2. Cook in a saucepan with boiling water over low heat for 20 minutes
  3. Cook the potatoes and mark them on a grill

Onion “Sauce”

  • 1 Onion
  • 2 laminated garlic cloves
  • Salt and pepper q.b
  1. Put everything in a frying pan and let it brown.

On the plate put the potatoes, the chopped cod steak on top and the onion. Finish by sprinkling with dehydrated olives and fresh coriander.
