Pig Cheeks in the Pan – Perfect harmony with National Touringa & Cabernet Sauvignon

  1. The cheeks should marinate overnight in red wine, aromatic herbs and with  pepper dough.
  2. The sauté of onion, garlic, pepper and carrots rests on the fat of the Almeirim chorizo slices, well fried in a first-class olive oil.
  3. After sautéing, join the cheeks with the marinade and let it cook over low heat for two and a half hours.
  4. As soon as you get the perfect consistency, refresh with fresh coriander.
  5. Accompany with some fries in slices.
Octopus Rice in Pan – Awakening of flavours with Quinta da Alorna Reserva Arinto & Chardonnay
  1. A good stew full of aromatic herbs and ripe tomatoes serves as a basis for stewing the broken octopus into generous pieces for two hours in red wine.
  2. After cooking and obtaining the perfect and reduced consistency, add the Carolino Rice.
  3. Correct the salt and refresh with fresh herbs, such as mint and parsley.
  4. Remove it from the heat and cover it to rest.
  5. The Rice must be “at point” and turned on.
