THE WINERY

Our winery brings unique conditions that are reflected in the quality of the wines we produce.

Quinta da Alorna has the capacity to receive two grape varieties simultaneously, after being unloaded to the grains, they pass through the destemmer. The destemmer is a piece of equipment that separates the grapes from the stalks and later passed to the production cellar, where they are fermented.

The white grapes are fermented without skins and normally without the seeds, while the red grapes ferment with the skins, because they are the ones that give colour not only to red wines but to roses too.

The longer the must is in contact with the skins, the more colour it will gain. In the case of rosé wine, the process is in certain way similar to the white wines and in the end a lighter colour is obtained.

In the storage cellar we have cement and stainless-steel tanks. Cement tanks are no longer used, not only because of the high risk of cement components passing into wine, but also because of the difficulty in cleaning. Cement tanks still exist, not only because they are part of the history of Quinta da Alorna, but also because they help keeping a more stable temperature inside the cellar.
