Our winery brings unique conditions that are reflected in the quality of the wines we produce.<\/strong><\/p>\n<\/div> Quinta da Alorna has the capacity to receive two grape varieties simultaneously, after being unloaded to the grains, they pass through the destemmer. The destemmer is a piece of equipment that separates the grapes from the stalks and later passed to the production cellar, where they are fermented.<\/p>\n The white grapes<\/strong> are fermented without skins and normally without the seeds, while the red grapes<\/strong> ferment with the skins, because they are the ones that give colour not only to red wines but to roses too.<\/p>\n<\/div><\/div><\/div> The longer the must is in contact with the skins, the more colour it will gain. In the case of ros\u00e9 wine<\/strong>, the process is in certain way similar to the white wines and in the end a lighter colour is obtained.<\/p>\n In the storage cellar we have cement and stainless-steel tanks. Cement tanks are no longer used, not only because of the high risk of cement components passing into wine, but also because of the difficulty in cleaning.
